The History

Eat your way through over 5000 years of chocolate.

The Workshop

Eat your way through over 5000 years of chocolate history! We will journey through the path chocolate took from its conception to what it is today. You will actually get to taste chocolate as it evolved, from ancient mesoamerican drinks to today's finest dark chocolate bars. Learn about the evolution of chocolate, the major players involved, and what this means to you today as a chocolate consumer.

The menu

An array of cacao and chocolate drinks, as well as dark chocolates of varying types. The chocolates are dark, and the drinks are water based. No products in this workshop will contain dairy, nuts, or gluten.*

*Since I don't manufacture some of the fine chocolate bars being sampled, I can't guarantee they were not produced in a dairy, nut, or gluten free kitchen.

How to prepare

All you need to bring is yourself and an appetite!

Anyone who loves chocolate and history. Understanding our food within the context of its history will not only give you a renewed appreciation for chocolate, but also help you make smarter choices today, as well as inspire you in the kitchen!

The Process

From tree, to bean, to bar!  Taste it all, and learn how its made.

The Workshop

Want to learn how chocolate is made? How about taste how chocolate is made? In this workshop, you'll actually taste chocolate at different points during the process, just as a professional chocolate maker does when creating fine chcolate. We will also delve into the types of chocolates that exist, how flavour develops, ingredients, and interpreting labels and chocolate jargon.

The menu

Cacao beans of varying origins and varieties. Chocolate at different stages of processing, and varying ranges of quality.

How to prepare

All you need to bring is yourself and an appetite!

Who is this workshop for?

Understanding the process is crucial to being able to discern fine chocolate. This workshop is open to the public, from the novice, to the lover, and as well as the professional who uses chocolate in the kitchen.

The Connoisseur

Professional Guided Fine Chocolate Tasting

Capacity: 8 pple          Cost: $45          Duration: 1.75 hours

The Workshop

Yes, even you can be a sophisticated taster! Geoseph will guide you through analyzing, tasting, and judging fine dark chocolate in a way that is approachable and practical. We will cover neurogastronomy and learn tools for tasting that will last a lifetime. We will delve into the makers, the growers, and how to interpret quality. Learn to enjoy chocolate based on what you know, not according to what you are told. An informed palate is a satisfied palate!

The menu

Dark chocolate from varying makers and origins. The chocolate will not contain dairy, nuts, or gluten.

How to prepare

Since we will be predominately using our nose and tongue, please keep the following in mind.

Try and refrain from:

- Strong odours (scents & perfumes, smoking, and poor hygiene)

- Strong flavoured foods (garlic, coffee, smoking etc.)

- A heavy meal 2 hours beforehand. Come hungry!


Who is this workshop for?

For those who want to master the flavour of chocolate, and understand how to judge fine chocolate at the professoinal level. This workshop will enlighten the novice, as well as better equip you seasoned chocolate tasters with more tools and a deeper understanding of neurogastronomy.

The Music

Themed tastings that revolve around pairing chocolate and music.

Capacity: 8 pple          Cost: $45          Duration: 1.75 hours

The Workshop

Fine chocolate is like music, full of an array of notes that harmonize into a satisfying flavour. Each workshop will be unique, pairing chocolates with music, while revolving around a specific theme. We will eat and analyze the chocolates while listening to the music they are paired with, followed by a discussion and sharing of our results.

The menu

The menu will include dark chocolates only, unless stated (some themes may revolve around milk chocolate etc.)

How to prepare

All you need to bring is yourself and an appetite!

Everyone. Whether you love chocolate, music, or just want to relax and try something new, this workshop is sure to satisfy. It's not as information heavy as the other workshops, but more of a learn as you relax and satisfy your senses.
