The Process of Chocolate

 
What is high quality chocolate? You may have received answers such as: the percentage of cacao, the variety of cacao, the origin of cacao, or the ingredients.  The truth is, there are many factors that affect the quality of the final chocolate product.   Understanding the process will shed light on where in the process quality can be maintained or lost.

There are two ways to know what good chocolate is.  The first is to understand how chocolate is made. The second is consciously eating as many kinds of chocolate as you can.  By comparing and contrasting chocolates,  you will become more discerning over time.
